What? Beets in pancakes? You better believe it, babe. I told you I like sneaky vegetables, right? Beets are beautiful! I think they’re tasty, but not everyone agrees with that. My kids are often unsure of them. On a good day, they’ll eat them roasted, but on a picky day, it’s nice to sneak them into something exciting…like pancakes. So for even the picky people, here’s a good way to get a serving of vegetables in. These pancakes are gluten free and vegan, and packed with nutrients.
Beets are a great source of vitamin C, folate, iron, magnesium, potassium, manganese, and fiber. They help prevent anemia! They are a great help for your liver and pancreas. They do a good job cleaning your blood and detoxing your body. The amino acid betaine, which is also found in quinoa, can help reduce the accumulation of fat in the liver. Beets are great for someone with gall bladder issues, or someone with diabetes. They should be included in any healthy lifestyle!
Cacao is the plant where chocolate comes from. It’s chocolate in it’s pure, unprocessed form. It is filled with antioxidants and is the highest plant source of iron. Often when we are craving chocolate, it’s because we are actually craving magnesium, which cacao contains in heaps. It also has more calcium thank cow’s milk. When you hear people say, “chocolate is good for you”, that is partially true. Pure cacao is very healthy! Skip the processed, sugar filled stuff and get some 100% organic cacao. I like to add cacao powder to smoothies, treats, and more. And cacao in bar form can be added to anything where you would normally use chocolate chips. Add maple syrup or honey if you would like to add some sweetness.
Flax seeds are an excellent source of Omega-3 fatty acids, which are essential for heart and brain health, and also the regulation of hormones. They are a great source of soluble and insoluble fiber. They are coated in an oily membrane which does some gentle and lubricated scraping of your colon rather than something like psyllium which is a harsher fiber. It can be helpful for people with sensitive or inflamed digestive systems. Also great for stabilizing blood pressure and more. They are a super powered little seed!
I made this recipe nut free by using hemp milk, but almond milk can also be substituted. To make your own quick hemp milk, add 1/3 cup of organic hemp hearts to 1 cup of filtered water and blend until creamy. Hemp is another powerful little seed rich with good oils and protein.
Let’s get to the pancakes! I used King Arthur Flour gluten free all purpose flour. I like this one because it doesn’t contain xanthan gum and it is certified non-GMO. Mix dry ingredients first and add maple syrup and stir.
Trim the ends off and chop one medium beet. Add to the hemp milk and blend in a blender on high until milk is fuschia and beet is totally blended.
Mix in the ground flax seed, avocado oil and stir.
Stir in broken cacao pieces.
Heat coconut oil (or ghee) to Med-High in a pan and scoop 1/3 cup of batter for each pancakes. Cook about 3-4 minutes, flip, and cook another 3-4 minutes. Serve with maple syrup or honey if desired. (Nut butters are welcome as a topping if you are a nut eater.)
